A Jerky Chicken

When I picked this recipe to try I was hoping to find something very flavorful and even a bit spicy but I did not get that at all. I find it hard to believe that the few changes that I made to the recipe would turn it into this boring chicken and rice dinner. On the other hand my son seemed to love it, he not only polished off his dinner but he also ate half of mine as well.
A Jerky Chicken
- 1 teaspoon onion, finely chopped
- 3 tablespoons brown sugar
- 4 tablespoons soy sauce
- 4 tablespoons red wine vinegar
- 2 teaspoons chopped fresh thyme
- 1 teaspoon sesame oil
- 3 cloves garlic, chopped
- 1/2 teaspoon ground allspice
- 1 habanero pepper, sliced
- 4 skinless, boneless chicken breast halves - cut into 1 inch strips
DIRECTIONS
- Combine the onion, brown sugar, soy sauce, vinegar, thyme, sesame oil, garlic, allspice and habanero pepper in the container of a food processor or blender. Process until smooth. Place the chicken into a large resealable bag, and pour in 3/4 of the sauce. Squeeze out excess air, and seal. Marinate in the refrigerator for at least one hour.
- Preheat your oven’s broiler.
- Remove chicken from bag, and discard marinade. Broil chicken for 10 to 15 minutes, turning once to ensure even cooking. Heat remaining sauce in a small pan, and pour over chicken when serving.

Recipe Alterations
I did make a couple of changes to this recipe as I did not have all ingredients on hand at the time:
- I did not add the sesame oil and refused to buy some for this recipe alone as I would never use it elsewhere
- I used dried thyme instead of fresh
- I chickened out (no pun intended) on the habanero pepper and instead used a jalapeno with all the seeds removed
- I doubled the amount of sauce
- I let it marinade for eight hours instead of one
- When I cooked the chicken I baked it instead of broiling as it appears my broiler isn’t working
Family Taste Test
I have heard that jerk chicken is in fact quite delicious and unless I stumble upon a better recipe I will not be making jerk chicken ever again. My husband really did not enjoy this recipe as he has a strong disliking of anything flavoured with all spice (which I had forgotten about). Surprisingly though my son really seemed to like it a lot and he is not normally a big fan of chicken meals. Personally I didn’t mind it just found it a little blah for my likings. Maybe following the recipe a little closer would have made it taste a little better but as I won’t be making this again I will never know. It did taste a little better the next day when my son and I ate it for lunch.
My Thoughts
Overall not a recipe I would use again. It is a very easy recipe to make but because you use a food processor you end up with nothing but extra dishes (and I hate doing dishes). Maybe next time I will look for a more authentic Jerk Chicken recipe that will appeal to all of my family. Jerk chicken is not a food I have had before and so I thought that this recipe would give me an idea of what it was like but this just wasn’t what I was looking for.

Just my opinion, but the things you left out will have an enormous effect on the flavor of your jerk chicken.
I would say to at least use the habanero but without the seeds.

Wow, a family of 6, You must be very busy. I only have two and I look forward to the kids bedtime all day! Thank you for letting me know about the ingredients I left out making a big difference. I really did not think they would have changed things too dramatically but now I think I will try again following the recipe exactly and will let you know how it turned out for me.
