Cheesy Potato And Corn Chowder

So I had to look up chowder to see what it actually is because this just wasn’t what I was expecting chowder to be. When I think of chowder I think of a soup with more of a cream base something along the lines of a clam chowder. This was not a bad recipe by any means in fact it was actually pretty tasty its just that as I was rereading the recipe I was thinking this can’t be a chowder. As it turns out a chowder is just a thick soup or stew so in fact this cheesy potato and corn soup recipe is in fact a chowder. So now you and I both know what a chowder actually is.

INGREDIENTS

  • 2 tablespoons margarine
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 (14.5 ounce) cans chicken broth
  • 3 cups peeled and cubed potatoes
  • 1 (15 ounce) can whole kernel corn
  • 1 (4 ounce) can diced green chiles
  • 1 (2.5 ounce) package country style gravy mix
  • 2 cups milk
  • 1 cup shredded Mexican-style processed cheese food

DIRECTIONS

  • In large saucepan, melt margarine over medium high heat. Add celery and onion; cook and stir until tender, about 5 minutes.
  • Add chicken broth; bring to a boil. Add potatoes; cook over low heat for 20 to 25 minutes or until potatoes are soft, stirring occasionally.
  • Stir in corn and chiles; return to boiling. Dissolve gravy mix in milk; stir into boiling mixture. Add cheese; cook and stir over low heat until cheese is melted.

Recipe Alterations

Lets see, did I even change anything? I stuck really close to the recipe on this one (highly unusual for me). The only thing that I did do differently was to just use cheddar cheese instead of the mexican style processed cheese food that was called for in the recipe. Which sounds really disgusting to me by the way.

Family Taste Test

My family was almost all in agreement and we liked this recipe. The only person that had issues with it was my son and that was because chiles are green so in his books that makes them yucky. No taste test just green equals yucky. However after the chiles and corn were picked out and stashed at a safe distance, (so they didn’t jump back in his bowl) he ate the rest of his bowl quite happily and even had some for lunch the next day.

My Thoughts

One tiny little complaint about the directions in this recipe. When you are cooking the onions and celery I found that the medium high temperature called for was too hot. I’m sure different stoves cook at different temperatures anyway but I got called away for just a few minutes and when I came back the margarine and onions were a bit burnt. If you have the luxury of actually staying in the kitchen while you cook then this might not matter to you at all but I am usually pulling my son off something he should not be climbing on or putting a soother back in my daughters mouth. So as a warning to all other mothers maybe cook the onions a a lower temperature so you don’t do what I do. Overall this ended up being an easy meal to make that the whole family actually enjoyed and I think I will be making it again.
