Meatball Potato Supper

This is a fairly self explanatory recipe consisting of potatoes and you guessed it meatballs. Since I like meatballs and potatoes I figured why not give this simple recipe a try? You don’t need anything special for this meal and it can be made in advance, two things that work for me. As a bonus if you already have meatballs made up and sitting in your freezer you will save a lot of prep time. This recipe also says to slice the potatoes but that does not work for me as it is extremely time consuming. Instead pick yourself up an inexpensive (around 20 bucks) mandolin. They save so much time in the kitchen and you get a nice even slice of vegetable every single time making for a more even cooking time.
INGREDIENTS
- 2 eggs
- 1/2 cup dry bread crumbs
- 1 envelope onion soup mix
- 1 1/2 pounds lean ground beef
- 2 tablespoons all-purpose flour
- 6 medium potatoes, peeled and thinly sliced
- 1 (10.75 ounce) can condensed cream of celery soup, undiluted
- 1 cup milk
- Paprika
DIRECTIONS
- In a bowl, combine the eggs, bread crumbs and soup mix. Crumble beef over mixture and mix well. Shape into 1-in. balls. In a large skillet, brown meatballs in small batches over medium heat; drain. Sprinkle with flour; gently roll to coat.
- Place half of the potatoes in a greased 2-1/2-qt. baking dish. Top with meatballs and remaining potatoes. In a bowl, combine soup and milk until blended; pour over potatoes. Sprinkle with paprika if desired. Cover and bake at 350 degrees F for 60-65 minutes or until the potatoes are tender.

Recipe Alterations
I changed hardly anything at all in this recipe although next time I make this I will be changing a few more things.
- I made the meatballs the way I always do. Using only one egg, cornflake crumbs not bread crumbs and I add salt, pepper, Worcestershire sauce and bbq sauce.
- I used a can of cheddar cheese soup instead of cream of celery
- Added salt and pepper to taste
Family Taste Test
I personally enjoyed this meal, but next time I will definitely add a few more things as just meatballs and potatoes makes for kind of a boring meal. Overall I found that it did have quite a nice taste to it and the meatballs were incredibly tender. My son who absolutely loves meatballs cleaned up his entire plate in record time even wanting seconds. My husband was not a big fan of this meal as he found it rather boring and not as flavorful as he would have liked. He also thinks that it is the start of a good meal but it needs some tweaking (like the addition of peas, onion, chedder cheese) to make it more of a casserole type of dish.
My Thoughts
As simple as this meal is to make I still found it to be quite time consuming especially since the day I chose to make this neither of my kids would cooperate and I was running back and forth between slicing potatoes and getting my son down off the coffee table or putting a soother back in my daughters screaming mouth. As I mentioned previously if there would have been meatballs made up and in the freezer the amount of time needed to make this meal up would have been next to nothing. Next time I make this recipe up I will be adding some sort of vegetable, maybe peas or corn to help complete this meal. I would also add chopped onion and possibly some minced garlic to the sauce, as well as salt, pepper and whatever other spices I might be wanting the day I make this. This is a good base recipe and with a few small changes I am sure it will become a recipe that all my family enjoys.

I tried this recipe, liked it very much but did change some of this recipe. I had to improvise because I did not have any hamburger, so I used ground chicken but that was still not enough so I added some ground pork. I also used the can of cheddar cheese soup instead of the cream of celery. I also added in the middle , peas and onions sliced. I also added alot of spices and ground pepper. Also didn’t have bread crumbs so used crushed crackers. Even served it to company, everyone liked it very much.
