This recipe is pretty good and actually has a very similar taste to a pizza. It’s not the quickest recipe since you have to cook the noodles and brown the hamburger before you throw it together but still not that time consuming. Makes a considerable amount- we had it for supper then leftovers for lunch the next day and I still threw some out. This is also one of those recipes that you can play around with, I think almost anything that you like on a pizza you could put in this casserole.

INGREDIENTS

  • 2 cups uncooked egg noodles
  • 1/2 pound lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 cup sliced pepperoni sausage
  • 16 ounces pizza sauce
  • 4 tablespoons milk
  • 1 cup shredded mozzarella cheese

DIRECTIONS

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook noodles according to package directions.
  • In a medium skillet over medium-high heat, brown the ground beef with the onion, garlic and green bell pepper. Drain excess fat. Stir in the noodles, pepperoni, pizza sauce and milk, and mix well. Pour this mixture into a 2-quart casserole dish.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes, top with the cheese, then bake for 5 to 10 more minutes.

Recipe Alterations

A few alterations, one of them kind of a silly one, as I just wasn’t paying attention:

  1. Ok first the silly one. One of the comments on this recipe suggests using italian sausage instead of the hamburger. We thought that was a good idea but I forgot to buy it when I went grocery shopping. The day we made this I ran to the store to get some but for some reason all the store had was frozen and since I was already running late I did not have time to thaw it. Instead of buying fresh hamburger like I should have I grabbed a package of beef sausage(which to me tastes a lot like hamburger). Why I did that I am not exactly sure but I ended up having to take the beef sausage out of the casing and frying it that way
  2. Used about ¾ package of egg noodles. Not sure how much that measures exactly but is more than two cups.
  3. As usual used more cheese than called for. About two cups, shredded, and used parmesan as well.



Family Taste Test

My son did not care too much for this recipe but my husband and myself did not mind it. Not a favorite for me but I think I would make it again, probably with italian sausage and possibly mushrooms.

My Thoughts

I like this recipe because of the possibilities, the only toppings that I am not sure about would be for a hawaiian type pizza casserole but even that might not be bad. I liked the pepperoni in this but next time I will cut the slices in half or quarters. Next time might also leave the green peppers out and substitute with something else because although I like them I think that was the reason my son did not and I might have better luck with him eating it next time if I leave them out.

Tex Mex Chicken

I get the monthly copy of Whats Cooking from Kraft Canada and that is where this recipe came from. At the time I was specifically looking for slow cooker recipes because it was summer and the whole month of July was 35 degrees Celsius or hotter, there was not a air conditioner left in the city and I was 7 months pregnant. Good times, good times. Even though it is winter and I can use my stove again I still like using the slow cooker for the sake of convenience.

INGREDIENTS

  • 1 lb. (500 g) boneless skinless chicken breasts, cut into 1-inch-wide strips
  • 2 Tbsp. (1/2 of 35-g pkg.) taco seasoning mix
  • 2 Tbsp. flour
  • 1 each: green and red pepper, cut into 1-inch-wide strips
  • 1 cup frozen corn
  • 1-1/2 cups chunky salsa
  • 1 cup KRAFT Tex Mex Shredded Cheese

DIRECTIONS

  • TOSS chicken with seasoning and flour in slow cooker. Stir in all remaining ingredients except the shredded cheese; cover with lid.
  • COOK on LOW for 6 to 8 hours (or on HIGH for 3 to 4 hours).
  • STIR just before serving. Top with the shredded cheese.

Recipe Alterations

There was only two things that I changed with this recipe and they are:

  1. I used the entire package of taco seasoning because when am I ever going to use the other half of it except if I was to make this again?
  2. I used aged cheddar instead of the tex mex blend that was called for.



Family Taste Test

We served this over white rice that was cooked in chicken broth and everyone seemed to enjoy it. My son picked out the peppers and corn (of course) but other than that everyone thought it was pretty tasty. I didn’t find that the extra taco seasoning made it too strong so next time I will be adding the same amount.

My Thoughts

There was one thing I will do differently the next time I make this. We found the peppers to be overcooked so next time I will add them a couple of hours before it is done instead of at the very beginning of the cook time. I love that this is so simple to put together, the most difficult part was cutting up the chicken and peppers. Very good for a busy day, take a few minutes to throw it together in the morning and for supper all you have to worry about is making rice or whatever you wanted to serve with it.

BBQ Chicken Calzones

I made this recipe with the full intention of actually making calzones as I had just seen a commercial for them the night before. Unfortunately I ran out of pizza dough and had to improvise. With too much filling and not enough dough to put it all into I went to my fridge to see what I could find. I had some whole wheat bagels in the fridge so that is what I used. Now when we make this recipe that is all we use as it is easier and we also think it tastes better.

INGREDIENTS

  • 4 slices bacon
  • 1/2 small onion, chopped
  • 3 cups shredded, cooked chicken breast meat
  • 2/3 cup barbeque sauce
  • 1 (10 ounce) can refrigerated pizza crust dough
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh cilantro

DIRECTIONS

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Fry bacon in a large skillet over medium-high heat until crisp. Remove from the pan to drain on paper towels; crumble. Add the onion and shredded chicken to the hot bacon grease in the pan. Fry over medium heat until onion is tender. Stir in 1/3 cup of barbeque sauce, and remove from the heat. Mix in the cooked bacon.
  • Roll the pizza crust dough out onto a greased cookie sheet. Press out to an even thickness, and then cut in half. Divide the chicken mixture between the two pieces of dough, spreading on only half of each piece to within 1/2 inch of the edge. Drizzle the remaining sauce over the filling. Sprinkle the cheese and cilantro over the top. Fold the uncovered portion of dough over the filling, and press the edges together with a fork to seal.
  • Bake for 25 minutes in the preheated oven, or until browned to your liking. Cool for a few minutes, then cut each calzone in half. Each serving is half of a calzone. These can be served with additional barbeque sauce if you like.

Recipe Alterations

There are not a lot of alterations as this is a simple recipe to begin with.

  1. Use halved bagels instead of refrigerated pizza crust dough.
  2. I just chop the chicken breast up. Shredding it is too time consuming for a recipe that doesn’t need it.
  3. I use whatever cheese I have on hand (usually sharp cheddar)
  4. I do not like cilantro so I leave that out.



Family Taste Test

My family loves this meal! Everyone eats it up and I love how easy it is to make. We made these on cheese bagels the last time and they were even better. Word of warning though, the cheese on the bottom of the bagel will burn if you do not keep an eye on it.

My Thoughts

This modified recipe is on my keep list. It is very simple and I love the taste of it. You can change it up to suit your mood as well. Use whichever bagels you prefer and add whichever toppings are floating your boat that particular day. Would also make a great snack if they are not enough of a dinner meal for you.
