Slow Cooker Beef Stroganoff

Beef stroganoff is one of my favorite meals but with a baby whose fussy time always seems to be right when I am trying to make supper and a toddler who likes to drag his stool up to the counter to “help mommy” it’s not something I attempted to make anymore. Then I found a recipe for slow cooker beef stroganoff that really tastes good and is easy to make.
INGREDIENTS
- 1 pound cubed beef stew meat
- 1 (10.75 ounce) can condensed golden mushroom soup
- 1/2 cup chopped onion
- 1 tablespoon Worcestershire sauce
- 1/4 cup water
- 4 ounces cream cheese
DIRECTIONS
- In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water.
- Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese just before serving.

Recipe Alterations
Even though this is a keeper of a recipe I have changed a few things that I felt helped make it even better.
- Add the cream cheese a good hour to hour and a half before it’s done otherwise it doesn’t seem to melt thoroughly enough and you may find a few clumps of cream cheese in your sauce.
- Mushrooms, you just have to add some fresh sliced mushrooms to this as it tastes so much better than if you don’t. (We’ve tried it both ways and we prefer with mushrooms)
Family Taste Test
This is one meal that everyone in the family can agree on and if they had their way we would probably be eating this once a week. Our only problem is that our two year old hates mushrooms and will pick them out of anything and everything no matter how small I chop them up, he will then dispose of them on the table, floor or both.
My Thoughts
I love that it is made in a slow cooker so I can throw it all together in the morning then just worry about making the egg noodles and maybe a vegetable or a salad right before we eat. I usually double everything except the meat so that there is enough leftovers for everyone for lunch the next day. Overall if you can cut everything up when you have a free minute in the morning then the time before supper should be a snap, even with kids hanging off you or screaming. This is a sit down type of family meal that gives you a chance to talk with your husband and gives you a chance to relax at least until the baby screams or the toddler throws some food at you.
