Speedy Salsa Chicken Quesadillas

This recipe says that it will be ready to eat in twenty minutes, I’m not sure what I do so wrong but I have never had this meal ready to eat in twenty minutes. Even though it takes longer to make than stated it is a very tasty meal that I find myself making quite often. To help ensure supper is on time I will make up the filling while everyone is napping but do not put the filling into the tortillas as they will get soggy and will not turn out as nice (lesson learned). As a bonus if the weather is nice you can grill these on the BBQ, although you have to make sure you do not overfill the tortillas as it will make a mess of your BBQ. I have also found that by grilling them you can save a lot of time over just cooking them in a skillet.

Speedy Salsa Chicken Quesadillas

  • 1/2 cup salsa
  • 2 Tbsp. MIRACLE WHIP Dressing
  • 1/2 tsp. chili powder
  • 18 flour tortillas (7 inch)
  • 3 cooked boneless skinless chicken breasts, sliced
  • 1 cup KRAFT Tex Mex Shredded Cheese

DIRECTIONS

  • Combine salsa, dressing and chili powder; spread evenly onto bottom halves of tortillas. Top with chicken and cheese.
  • Fold tortillas in half to enclose filling.
  • Cook in skillet sprayed with cooking spray on medium heat 4 to 5 min. on each side or until both sides are golden brown and cheese is melted. Cut each quesadilla into three wedges and serve.

Recipe Alterations

Overall I change very little with this recipe as it tastes great as is but I do change a few minor things including:

  1. 1 can of black beans
  2. 1 can of corn
  3. More cheese is added than called for and we shred our own to save money
  4. Whole wheat tortillas instead of white

I drain and rinse both before adding them to the filling. I find that by adding this you get a nice taste from the black beans and some sweetness and crunch from the corn and as an added bonus you are adding more veggies into the meal which is always a good thing.

Family Taste Test

My whole family enjoys this meal although my son usually will pick the corn out, because corn is “yuck” (Unless it comes from somebody else’s plate, then is it acceptable). After the discovery of that first kernel of corn a time consuming hunt begins for any more that may have been snuck in while he wasn’t looking. When all corn is removed and he deems the quesadillas to be acceptable he then will pick the black beans off eating each one individually and will eventually finish off the rest of the quesadilla sometimes even wanting seconds. We usually use sour cream as a dip but salsa would taste great as well.

My Thoughts

This is a fairly simple and quick meal to make especially if you make the filling ahead of time and although some might feel this is more of an appetizer we find it quite filling especially with the addition of the black beans and corn. If you can get away with it try and use whole wheat tortillas as I find they are more durable and don’t get soggy quite as quick, they are healthier for you and I find they taste better than the white ones.
