Tex Mex Chicken

I get the monthly copy of Whats Cooking from Kraft Canada and that is where this recipe came from. At the time I was specifically looking for slow cooker recipes because it was summer and the whole month of July was 35 degrees Celsius or hotter, there was not a air conditioner left in the city and I was 7 months pregnant. Good times, good times. Even though it is winter and I can use my stove again I still like using the slow cooker for the sake of convenience.

INGREDIENTS

  • 1 lb. (500 g) boneless skinless chicken breasts, cut into 1-inch-wide strips
  • 2 Tbsp. (1/2 of 35-g pkg.) taco seasoning mix
  • 2 Tbsp. flour
  • 1 each: green and red pepper, cut into 1-inch-wide strips
  • 1 cup frozen corn
  • 1-1/2 cups chunky salsa
  • 1 cup KRAFT Tex Mex Shredded Cheese

DIRECTIONS

  • TOSS chicken with seasoning and flour in slow cooker. Stir in all remaining ingredients except the shredded cheese; cover with lid.
  • COOK on LOW for 6 to 8 hours (or on HIGH for 3 to 4 hours).
  • STIR just before serving. Top with the shredded cheese.

Recipe Alterations

There was only two things that I changed with this recipe and they are:

  1. I used the entire package of taco seasoning because when am I ever going to use the other half of it except if I was to make this again?
  2. I used aged cheddar instead of the tex mex blend that was called for.



Family Taste Test

We served this over white rice that was cooked in chicken broth and everyone seemed to enjoy it. My son picked out the peppers and corn (of course) but other than that everyone thought it was pretty tasty. I didn’t find that the extra taco seasoning made it too strong so next time I will be adding the same amount.

My Thoughts

There was one thing I will do differently the next time I make this. We found the peppers to be overcooked so next time I will add them a couple of hours before it is done instead of at the very beginning of the cook time. I love that this is so simple to put together, the most difficult part was cutting up the chicken and peppers. Very good for a busy day, take a few minutes to throw it together in the morning and for supper all you have to worry about is making rice or whatever you wanted to serve with it.
